Fancy Some Yellow Gloop?

I found this lovely looking curry recipe for Spinach Kofta with yoghurt sauce. And so I set about making a mess in the kitchen - getting the girls to help me make naan from scratch while the fenugreek and mustard seeds were popping in the oil...

And I thought, since I didn't have any chick-pea flour, that I might try the manioc flour my in-laws had brought home from their last Vanuatu trip. I knew it wouldn't have that lovely hummusy flavour, but surely it would do the trick?


There was just one thing I didn't know about manioc flour. Its ability to thicken. The flavours were great - but next time I think I might use the chick-pea flour as the recipe recommended.

And in the meantime, if anyone is looking for some glue - yellow in colour - give me a call!
